Eunice "Niki" (Toothaker) Parson

Eunice "Niki" Parson RALEIGH - Niki's delight in the things of this life began as Eunice Eleanor Toothaker on February 25, 1913 in Chicago, IL. In 1916, her family settled in South Bend, IN. A zest for learning led her to a degree in English from Indiana University and then, to an adventure in Powell, WY to teach high school.
In 1938, she married Edward "Ed" Parson of Kokomo, IN. They moved to Houston, TX in 1941 and were active members in the community. Following Ed's death in 1993, Niki continued to live in Houston until she relocated to Raleigh, NC in 2000 to continue her celebration of life.
She was an active member of First Presbyterian Church of Houston, a devoted member of P.E.O for more than 60 years and an avid volunteer in child education.
Niki, 90, died on August 24, 2003 at the Hospice Unit of Rex Hospital.
She is survived by daughters, Nancy (Dave) Neal, Denver, CO, Susan Mitchell, Raleigh, NC; grandchildren, Chris Hopper, Wider, ID, Sandy (Marianne North) Hopper, Golden, CO, Thomas (Catherine Schomer) Mitchell, Providence, RI, and Rebecca (Michael) Thomas, Greensboro, NC; great-granddaughter, Ana Hopper, Golden, CO, and Niki's siblings: James (Marge) Toothaker, South Bend, IN, Miriam Tillery, Elgin, IL, and Lettie ( Bob) Johnson, South Bend, IN.
A graveside service and burial will be held at Forest Park East in Webster, TX (near Houston) on September 5, 2003 at 10 a.m.
In lieu of flowers, the family asks that remembrances be made to a hospice organization or charity of choice.
